20 January is the 24th day of the year, known as ‘Daichan’. Daichan is the last of the 24 solar terms that divide the year into 24 periods, and means the coldest time of the year.

It is considered the best time to prepare food (miso, sake, frozen tofu, agar) using the cold air, called ‘kanshikomi’. It is also known as ‘cold water’, and water drawn in the cold is treasured, as it is said that ‘water drawn on the day of the great cold will not spoil’.
